Shrimp Scampi Recipe 1

Ingredients:

  • 1 lb of raw shrimp (peeled and deveined)
  • 3/4 cup of white wine
  • 1/4 cup of light olive oil
  • 1/2 cup of unsalted butter
  • 2 tablespoons of margarine
  • 3 tablespoons of minced garlic
  • 1/4 teaspoon of paprika
  • 1/2 tablespoon of parsley flakes
  • grated parmesan cheese (to top)

Directions:

  • Heat the wine, olive oil, butter, margarine, and garlic in a large skillet on a medium heat until it starts to boil.
  • Once it begins to boil add the paprika and parsley flakes, stir in and immediately add the shrimp.
  • Cook for approx 4 to 5 minutes or until the shrimp turns pink.
  • Ensure you do not overcook. Spoon the shrimp onto a plate with some of the cooking sauce and top liberally with the parmesan cheese.
  • Serve & enjoy!

Shrimp Scampi Recipe 2 - Low Butter Version with Pasta

Ingredients:

  • 2 tablespoons of olive oil
  • 1 lb of peeled and deveined shrimp
  • 4 large minced garlic cloves
  • 1/4 to 1/2 teaspoon of dried hot red-pepper flakes
  • 1/2 cup of dry white wine
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons of unsalted butter
  • 1 pound of fettuccine
  • 1/2 cup of chopped fresh flat-leaf parsley

Directions:

  • Bring a large pot of water to the boil for the pasta while you prepare the other ingredients. This dish cooks very quickly once started so ensure you have everything ready.
  • Cook the pasta in boiling water until just tender, according to package instructions. When the pasta is about 4 minutes away from being ready heat a 12 inch heavy skillet over a medium-high heat. Then add oil and sauté shrimp turning over once, until just cooked through (about 2 minutes). Transfer shrimp to a bowl with a slotted spoon. Add garlic, red pepper flakes, wine, salt and pepper to the pan and cook while stirring occasionally for about 1 minute. Add butter to skillet and stir until melted. Return shrimp to pan and stir to coat with butter and garlic mixture. Remove skillet from heat.
  • Drain the pasta, reserving 1 cup pasta cooking water. Toss the pasta with shrimp mixture and chopped parsley in a large bowl, adding some of the reserved cooking water if the pasta seems too dry. Divide among four shallow bowls and serve (makes four servings).

Shrimp Scampi Recipe 3

Ingredients:

  • 2 tablespoons of olive oil
  • 2 tablespoons of butter
  • 1 pinch of red pepper flakes (optional)
  • 4 cloves of garlic (chopped)
  • 1 pound of shelled and deveined shrimp
  • 1/4 cup of white wine
  • 1 lemon (juice and zest)
  • 1 tablespoon of butter
  • 1 pound of cooked linguini
  • 1 tablespoon of chopped parsley (optional)
  • 1 tablespoon of grated parmigiano reggiano (optional)

Directions:

  • Heat the oil and melt the butter into a pan.
  • Add the chili flakes, garlic and saute until fragrant (approx 1 minute).
  • Add the shrimp and saute until cooked (approx 1 - 3 minutes per side).
  • Remove the shrimp from the pan.
  • Add the wine and lemon juice and bring to the boil.
  • Simmer the liquid until reduced by about half (approx 3 - 5 minutes).
  • Add the butter, wait for it to melt and turn off the heat.
  • Add the shrimp, pasta and parsley then toss to coat.
  • Serve with a garnish of parmigiano reggiano if you wish.

Shrimp Scampi Recipe 4

Ingredients:

  • 1/4 cup of olive oil
  • 1 lb of peeled and deveined large shrimp
  • 4 large garlic cloves, left unpeeled and forced through a garlic press
  • 1/2 teaspoon of dried hot red-pepper flakes
  • 1/2 cup of dry white wine
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 5 tablespoons of unsalted butter
  • 3/4 lb of capellini (angel-hair pasta)
  • 1/2 cup of chopped fresh flat-leaf parsley

Directions:

  • Bring a 6 to 8 quart pot of salted water to a boil.
  • Meanwhile, heat oil in a 12 inch heavy skillet over a moderately high heat until hot but not smoking, then sauté shrimp, turning over once until just cooked through (approx 2 minutes). Now transfer with a slotted spoon to a large bowl. Add the garlic to oil remaining in skillet along with red pepper flakes, wine, salt, and pepper and cook over high heat while stirring occasionally for approx 1 minute. Add the butter to skillet, stirring until melted, and stir in shrimp. Remove skillet from heat.
  • Cook the pasta in boiling water until just tender (approx 3 minutes). Reserve 1 cup pasta-cooking water, then drain pasta in a colander. Toss pasta well with shrimp mixture and parsley in large bowl, adding some of reserved cooking water if necessary to keep moist.

Shrimp Scampi Recipe 5

Ingredients:

  • 2 pounds of shrimp
  • 8 tablespoons of butter
  • 4 large cloves of garlic
  • 4 tablespoons of dry vermouth
  • 2 tablespoons of vegetable oil
  • 4 tablespoons of fresh or dried parsley
  • 2 teaspoons of flour
  • Dash of lemon juice (1/2 a lemon)
  • 1 pound of linguine (or your favorite pasta of choice)
  • Salt and pepper to taste

Directions:

  • Cook the linguine according to package directions (al dente).
  • Rinse, peel, and de-vein the shrimp in cold water. Dry on paper towels.
  • Sauté garlic and parsley in butter and oil for 1 to 2 minutes.
  • Do not let the garlic turn brown.
  • Add the vermouth, then shrimp.
  • Raise heat to medium-high and cook for 3 to 5 minutes while stirring frequently.
  • Do not overcook. Season with salt and pepper.
  • Add flour to slightly thicken the garlic butter.
  • Add the lemon juice during the last minute of cooking.
  • Remove from the heat and serve immediately. This dish serves 4 to 6.

 Shrimp Scampi Recipe 6

Ingredients:

  • 6 jumbo shrimp (peeled and deveined)
  • 2 Tablespoons of Olive Oil
  • 1 teaspoon of Butter
  • 1 teaspoon of finely chopped Shallots
  • 3 cloves of finely chopped fresh Garlic
  • 1/2 a squeezed Lemon
  • 2 oz of Sherry
  • 2 oz of Brandy
  • Salt and Pepper to taste

Directions:

Clean your shrimp, peeling off shell and deveining. You can leave the tails intact for presentation or to enable the dish to be used as finger food if desired. In a medium-sized pan, sauté olive oil, butter, and garlic for about 1 minute. Add shallots and shrimp and sauté for another 2 minutes on each side of shrimp. Flame with brandy. Add sherry and sauté for about 2 more minutes. Serve shrimp scampi over rice or your favorite pasta.
